Chocolate Cake: Liberation In A Candy Bar

It must have been a good six months ago now that I was scouring Twitter, and came across a Vogue article featuring this gorgeous cookbook. The book was 'Audrey at Home'- a cookbook, memoir and journal containing recipes, photographs and stories of a certain Ms Hepburn- written by her son, Luca Dotti. Now, I've been a huge admirer of Audrey Hepburn for as long as I can remember- whether that's for her acting, humanitarian work or simply style- but until recently, her cooking, or love of food was never familiar to me...

But then came this book! With a collection of recipes ranging from delicious pasta dishes to chocolate cake (yup, it was written for me)- there's a whole host of simple family style recipes which I've been loving sampling (they're all so easy, but so so delicious)- so I thought I'd share one of my favourites, a classic chocolate cake- which is perfect for well, any day of the week!

You will need:
- 300g Chopped Dark Chocolate
- 60ml Whole Milk
- 120g Unsalted Butter
- 8 Eggs- separated
- 200g Sugar
- Flour for cake tin
- Icing Sugar for dusting


1. Preheat the oven to 200 degrees, and butter and flour (or grease) a baking tin- I used one that was about 28cm and spring form.

2. Melt the chocolate and milk in a bain-marie, and then add the butter to melt thoroughly. Turn off of the heat and add the 8 egg yolks and mix. In a separate bowl or mixer, gradually add in the sugar to the egg whites- beating until it forms stiff peaks. Gently fold this into the chocolate mixture and pour into your prepared tin.

3. Bake in the oven for 30 minutes , and once baked- turn off the oven, open the door- and leave in for a few minutes to avoid the crust from cracking. Remove from the oven and leave to cool before serving and icing! Enjoy with ice cream, whipped cream or alone!
