Overnight Oats Bircher Madeline Shaw Recipe

Now, on this little corner of the internet- I'm normally very keen to post my own recipes and share things I've created myself (hence why they're often a little spread out- these things take time people)! However, the most recent addition to my recipe book selection comes from the gorgeous Madeleine Shaw (nutritional health coach, yoga extraordinaire and all round health guru)- and I couldn't help but want to re-share one of her delicious healthy recipes on here, to give you an idea of what's inside her beautiful book and because who doesn't love a tasty, and easy breakfast? I decided to opt for the overnight bircher oats, something I'd never tried before, but was determined to give a go- especially down to how simple they are!

Overnight Oats Bircher Madeline Shaw Recipe
You will need (for 2):
- 150g gluten free oats
- 300ml almond milk
- Pinch salt
- 1tsp vanilla extract
- 2tsp cinnamon
- tsp coconut oil
- 50g pumpkin seeds
- 1 green apple
- tsp honey
- 50g natural yoghurt

1. The night before you want your bircher for breakfast, soak the oats in the milk, salt and vanilla extract- still it well and pop it in the fridge overnight.

2. Pop the cinnamon, coconut oil and seeds in a frying pan over a low heat and toast them for a few minutes- leave them to cool and pop aside until the morning!

3. The next day, grab the oats from the fridge, pop half in a jar- grate your apple on job, stir in some honey and dollop the yoghurt on top too (finally sprinkling the seeds as a finishing touch)!
